Cooking Michelin-starred cuisine for over 15 years, chef Ian Swainson joined The Pass with a wealth of experience from award-winning restaurants throughout the UK such as La Becasse, L’ortolan and the Samling. Ian is inspired by surrealist art and specialises in and only offers tasting menus: a number of small ‘taster’ dishes that complement each other to make a complete menu of various courses rather than a typical number of substantial dishes. The aim is to provide you with a fascinating journey of foods, flavours and textures that you might not ordinarily come across, giving you a dining experience, rather than just a meal.
