PROUD COUNTRY HOUSE IN STANMER PARK IS PLEASED TO ANNOUNCE NEW RESTAURANT ‘SOURCE’

Source will  ensure all of its meat  and freshly-grown produce will  be from  within  a 20-mile  radius of our front door.  Menus will  be seasonal,  and we will ensure  that  our producers respect  the environment and deliver  exceptional quality.  Ingredients will  be simply  and beautifully cooked and served  at a price that  is fair for everyone from producer to guest. The quality  of our food  is matched by the sumptuous surroundings of our Grade 1   listed Georgian country   manor, which  has been sensitively renovated juxtaposing antiques and reclamation yard finds,  with  70s glamour  and modern patterns.

The man behind  the operation is our  new Head Chef James  Mitchell,  who joins  Proud  Country House after 25 years working in some of the  best restaurants in the country. His career  started  at The Savoy Hotel  in London, after  which  he went  on to revamp and reinvigorate  the kitchens of several high-end West  End Hotels  to much• lauded  success; including The Strand  Palace and  Hilton Park Lane.  James gained  his first  Head Chef position at the age of 25 at the four-star Boutique Belgravia  Hotel, on Brighton’s seafront. Since moving  to  Brighton, James’ love for his new local  area inspired the  idea of creating a restaurant which  pipes  a real fanfare  about  the  produce of the county  and offers  the people  of Sussex their  new favourite Brighton haunt.

His enthusiasm for  lovingly-made  food  shines through in our  new menu.  He believes  in starting  with  the very finest  ingredients, treating them  with  respect  and letting the quality  speak for  itself. Some of our favourite items on the autumn menu  include  pickled  and grilled  south coast  mackerel, beef  rib on the  bone, game  chips  with pepper  sauce and the very  best pork  scratchings going. For those  after  something lighter,  we have a menu full  of healthy,  vegetarian or plant-based options   such as the jam-packed wheatberry, roast  parsnip,  butternut squash  and dried  cranberry, chicory,  watercress and Brighton Blue salad.  Source’s Grazing  Menu will also be available in our  library  for small plates,  bar snacks and delicious informal dining.
